Grilled Chicken Drummies

Serving Size: 4

Ingredients:
2 lbs chicken drummies
4 tablespoons olive oil
4 large garlic cloves, minced
sea salt, to taste

Directions:
1. In a large mixing bowl place chicken, olive oil, garlic and salt. Coat the chicken with the other three ingredients.
2. Preheat charcoal grill to medium high, direct heat.
3. Place chicken on the grill, turning only once. Cook for approximately 4 minutes per side or until chicken is thoroughly cooked.

Grilled Ahi Tuna Sandwich

Ingredients:
4 5 oz. ahi tuna steaks
1 tablespoon freshly grated ginger
1 tablespoon soy sauce
1 tablespoon garlic cloves, minced
1 tablespoon lemon juice
mayonnaise, to taste
4 thin slices large tomato
8 slices french bread, toasted

Directions:
1. Preheat your charcoal grill.
2. In a small bowl combine ginger, soy sauce, garlic and lemon juice.
3. Lightly coat the grill with olive oil.
4. Place the tuna steaks on the grill and spoon the sauce mixture over each steak. Flip once and repeat.
5. Grill for 3 minutes per side over indirect heat.
6. With your mayonnaise, tomato and bread make a sandwich after removing tuna steaks from grill!

Chipotle BBQ Pork Ribs

Serving Size: 6

Ingredients:
2 lbs. baby back ribs
3 tablespoons unsalted butter
2 large garlic cloves, minced
1 bottle plain bbq sauce
3 tablespoons ground chipotle pepper
2 tablespoons brown sugar
1 tablespoon paprika
1 tablespoon cumin
1 tablespoon kosher salt

Directions:
1. Place ribs in a steamer and let them steam for 1 hour. Take them out and let them rest.
2. Preheat grill.
3. In a large saucepan add in butter. Once butter is hot and begins to melt add in garlic. Cook for 1 minute then stir in bbq sauce.
4. In a mixing bowl combine chipotle, brown sugar, paprika, cumin and salt. Mix well then add to sauce and stir.
5. Allow mixture to bubble, then set aside to cool slightly.
6. Baste ribs with bbq sauce and place on grill over medium high, indirect heat. Grill turning over only once. Cook until thoroughly done.

The Spicy Cheeseburger

Serving Size: 4

Ingredients:
1 1/2 lbs. ground beef
1 tablespoon butter, softened
sea salt and black pepper, to taste
4 sliced Muenster cheese
1 medium white onion, cut into rings
jalapenos, from a jar

Sauce Ingredients:
1 cup mayonnaise
1 tablespoon ketchup
2 teaspoons horse radish
black pepper, to taste
4 sets of hamburger buns

Directions:
1. In a medium mixing bowl combine ground beef, butter, salt and pepper. Mix well and arrange into 4 patties and set aside.
2. Preheat grill.
3. Prepare sauce by mixing mayonnaise, ketchup, horse radish and pepper. Mix well and place in refrigerator.
4. Grill hamburgers over indirect high heat. Cook until at desired doneness. Place slice of Muenster cheese on each burger just before pulling them off the grill.
5. Arrange hamburgers, as seen in the photo above. Enjoy!

Baby Back Ribs with a Maple Syrup Glaze

Ingredients:
2 lbs baby back pork ribs
1/2 cup maple syrup
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
3 tablespoons brown sugar
1 tablespoon cider vinegar
kosher salt and black pepper, to taste

Directions:
1. Place the ribs in a large pot, cover with water. Place a lid on top of the pot and simmer for 1 hour. Then drain water off of the ribs and place ribs in large shallow dish.
2. In a small saucepan combine maple syrup, Worcestershire sauce, ketchup, brown sugar, cider vinegar, kosher salt and pepper. Stir ingredients together and cook for until sauce begins to bubble.
3. Marinade the ribs with the sauce and place in refrigerator for at least 1 hour.
4. Meanwhile preheat charcoal grill.
5. Remove ribs from marinade. Reserve the sauce and heat it back up in a small saucepan.
6. Place ribs on the grill over indirect heat. Grill for 20-30 minutes brushing marinade over ribs until all the sauce is gone and the ribs have a nice glaze over them.
